
Refined Sugar-Free Banana Bread Recipe

Looking for a simple recipe that will satisfy your sweet tooth without the guilt? This recipe uses natural sweeteners that your family will love, and the best part? It's super easy!
What You'll Need:
- 3-4 Over-ripe mashed bananas
- 1/2 Cup Melted butter
- 2/3 Cup Maple syrup
- 1.5 Tsp Vanilla extract
- 2 Large eggs beaten
- 100g Active/discard sourdough starter
- 2 Cups plain flour
- 1.5 Tsp Baking soda
- 1/4 Cup Milk
Instructions:
Now that you have all your ingredients ready, it's time to put on your chef hat and get cooking! Follow these simple steps:
- Preheat your oven to 356°F/180°C.
- Sift flour and baking soda together.
- In a separate bowl, combine the mashed banana, butter, and vanilla.
- Add milk, maple syrup, and eggs (combine well)
- Add the sourdough starter
- Slowly add the flour mixture to the wet mixture.
- Mix until combined.
- Pour mixture into a buttered loaf pan and bake for 50 minutes or until your skewer comes out clean.
- Once cooked, remove from the oven and allow to cool in the pan for 10 minutes before removing from the pan.
- Enjoy!
Notes:
- You can make this bread with or without a stand mixer.
- This bread can be stored in a container on the counter for up to 3 days, in the fridge for 5-6 days or frozen for up to 3 months.
- For best results, I like to use eggs, milk, and maple syrup that are room temperature.
